Try cabin zoom.
I don't know about Mercedes and Renaults... But it works fine to me in the new Scania R and S where the cc display in so tiny that I cant read it without using the cabin zoom
Honestly most of them are terrible. I would suggest using dashboards from Piva over on the official forums as most of them are of a much higher quality and far easier to use than stock dashboards.

I also second the suggestion to use scaling as this definitely helps with clarity.
