It's more of a forced limitation. The game engine is perfectly capable of loading more and rendering things further away but SCS made a deliberate choice to limit this distance so as not to overwhelm lower-end systems. This is also why the roads have more curves and up/down swells than we find in real life; so that there are trees and hills to hide the digital horizon.
I hope that with updates/upgrades to better technologies and the attrition of those lower-end systems, that SCS will increase this distance in the future.
