Choose the game version you want to stay on.
In the Steam main page, top left, go to Steam / Settings / Downloads
Check the box "Only auto update games between:"
Set en initial and final hour to some you are definitely off line, ie i set mine 3:00am to 4:00am
So the next day the updates will be in queue but will not initiate. I you want to be extra safe, the en the Download queue, click on the blue X, so it will be removed from the queue.
Off course you will be not be able to play a game not updated. But you can decide if and when it gets updated.
