Please post your complete game.log file from the crash to http://pastebin.com (copy/paste, split the game.log if it is too big) and post the link to it here please. This way we can find out what the problem is.
You can find your game.log in your documents in the ETS2 folder as a default install on Windows. (If it is not there check OneDrive.) On a Mac the ETS2 folder is in your Library and there in the Application Support. On Linux the ETS2 folder is in the .local and there in the share.

This mod is outdated:
You seem to have removed a truck mod without selling all the modded trucks first. You have to put the mod back in and sell all the modded trucks before removing the mod again.
Well your log shows that you do have mods installed and
It does not have to be a truck mod that is causing the issue, it could be any mod.
As Wolfgang has mentioned you need to put back your mods and then sell ANY truck or trailer that has had a mod attached to it in anyway. Including any given to your AI drivers.
Easiest way is just sell the truck/trailer and buy a standard SCS truck.
Does the game run fine with a vanilla no mods every profile?
If that does not work you will have to rollback to a previous version of the game before selling of the modded trucks/parts before removing the mods.
There is no 8x4 chassis for Iveco trucks in the game without mods.
No one else has this issue, so it is your modded game that is the problem.
Try this.
Make a copy of you "Euro Truck Simulator 2" folder.
Delete you "Euro Truck Simulator 2" folder.
Now validate the game files.
Start the game and create a new profile, play the game do the first delivery.
Save and exit the game.
Now you have two choices, either play normally until either you can get a bank loan to buy you own truck and garage or until you have enough money to do the same.
You could get a mod to boost your money and XP but you might be in the same situation as you are now with a modded profile.
Once you have done that drive to an Iveco dealer and see if you can buy the truck.
if all that works it will prove that your modded game is the cause of the issues you are having.
If not, then post you game.log and we will take another look to see if something else is
