You have a ton of errors like this one:
"00:01:34.411 : <ERROR> Sign 'prefabloc170' references part 'ibe' not found in model '/prefab/garage_scandinavia/garage_expensive_sc.pmg'"
So something isnt ok with a mod - probably map mod.
I also saw a reference to Onedrive - never use Onedrive to store save files or other files needed for the game.
At the end of the log there is alot of errors referring to truck parts so I guess you have truck parts mods that isnt compatible with the version of the game you are using.

Something uses more than 50% of your RAM when you start the game:

Though not a problem in the first place it might be that you have a resource hog running in the background when you start the game.

Your files are on OneDrive. Put them back into your local document folder as OneDrive is known to cause problems. Additionally you should deactivate OneDrive (please use a search engine for that).

Make sure that the driver of your wheel is up-to-date.

These mods are outdated:

As you have to remove truck/trailer mods you have to sell all the affected trucks/trailers before you can safely remove the mods.

Additionally make sure that the loading order of your ProMods is correct.

You also seem to have removed a mod without selling ALL the modded parts first. You have to put the mod back in and sell all the modded parts before you can remove the mod again.
My files should be on both, local and OneDrive.
Do I have to sell all the mod tyres before uninstalling the mod? Because, that would take forever.

yes, but it can be quick. sell anything from your own truck, then pick one of your driver truck sell anything from it save it and use it for copy/paste its config to all of your trucks

No, they are not. Your save files are on OneDrive only.

It has something to do with this:

And there is even more. So you should check every mod you removed lately.

OneDrive.
Open the OneDrive folder in Windows Explorer.
Open Documents folder.
Right click your "Euro Truck Simulator 2" folder and you should see an option called "Always keep on this device". Make sure it is ticked. It then should start downloading the files from OneDrive and put them back into the Documents folder.
