This is going to make smooth turning somewhat erratic as the wheel moves the steering angle too fast.
Go into the Controls settings and turn the 'Steering Sensitivity' setting down. I use 100% with a Logitech G920. Try using 50% or even less - it will turn slower so you are going to need to adjust your driving.
There is a mod for using wheels with 180 - 270 degrees of turn:

The most Important step is to copy and paste mod file to right directory. Move mod file to: C:\Documents\Euro Truck Simulator 2\mod folder.
Don’t forget to activate your mods in game!
If you watch all of the video - you can add subtitles if you don't understand Spanish.
I use the following settings for my G920 in the controls setup.
Acceleration Axis - Joy Accelerattor
Acceleration axis deadzone ~0 - 5%
Acceleration axis mode - Inverted
Click 'Joy Accelerator' button and depress accelerator to set up.
Brake axis - Joy Brake
Brake axis deadzone 0%
Brake axix mode - Inverted
click 'Joy brake' button and depress brake pedal to set up.
I cannot remember the fix for this issue. It is one of the control settings, but right now I don't recall which one. Will post back if I can offer some ideas of where to look.
