I don't really have an opinion on being able to select the amount of time skip from sleep. It was nice in 18 Wheels of Steel because it also despawned traffic. You could sleep for "1" hour, and traffic would be gone. It was great. But there's no reason for that in ETS2/ATS. I'm not against being able to choose the sleep amount, I just don't see a reason for it.
The games, by default, try to reflect real world rest requirements. Planning and scheduling your rest breaks (along with fuel stops) is a strategic element, one of the few such challenges in the game, and if it is too much for you, you can make the game easier by simply turning off Fatigue in the options menu.
I just think it's be more realistic if the ability to choose length of rest was in the game.
Of course the choice is available in real life. I watch a lot of trucking vloggers on YouTube and they all choose their length of break. Often a driver will pick up a load, drive towards the drop-off point, but take his break, either 15, 20, or 30 minutes, en-route. You can't do this in the game, as every time you take a break you take a full 8 hours, which is unrealistic.

This wouldn't take away from the strategic element of the game (needing to plan for rest and fuel stops etc), but would add the ability to skip starting the day at 2am or something silly like that.
Ie, leave the mandatory rest length at 8 hours, but give the ability to specify longer.
