How to launch without updating?
Steam does not have the option to block the updates. It is either update or do not play.
I know there is the option to play in beta and 1.38, but last time it messed up my profile.

Your options are:

A: Use the betas menu to roll back to a previous version
B: Launch Steam in offline mode, then try launching the game
C: Buy the disc version(which isn't sold anymore?*)
D: Not advised, but piracy.

Option A is the easiest and safest way. You may have to restore an older profile from the profiles.bak folder to avoid corruption.

Unfortunately if your Steam client knows there is an update pending it won't let you play offline. Have to go into offline mode before the update is released for this to work.
Option A is the best way.

In the properies of the game is also an "updates" tab.
There you can set the game to only update when you start the game.

When an update is releases you will see that but it wont update until you launch the game in Steam online mode.
So you can just go offline and play.

Again, read my message. Steam doesn't let you play offline if there is a pending update.

If you set the update to the way I suggested it works fine.
At least it did, last time I have set it that way.

If you are online the play button turns blue and you can start the update manually there.
If you go offline you can just play the game. The button will be green again.

It does not work that way for me. I go offline and it does not let me play.

Hmm... maybe I have set it to a fixed version after I saw that there was an update.
To be honest, I don't remember exactly. I thought it was working that way.

Odd, because that is exactly what I did with the latest update. I have Steam set to 'only update this game when I launch it'. I spotted that an update was pending, took a copy of the Steam programs structure just in case, and put the Steam client into offline mode. I then launched the game (from a desktop icon, maybe it won't let you Play from the Steam client but I never start the game that way) and was able to finish what I was doing, drive to the nearest garage, make it my home and then create a reference save prior to performing the update by putting the Steam client back in online mode. It works here.
