Did you ever get to the bottom of this?
Or has anyone else managed to get ETS2 (or ATS) to run in VR mode on the Quest (or in my case Quest 2) using Virtual Desktop?
No, I have not, but have not tried recently either. I think the fact that VR support is a BETA option might be what affect this.
how did you get it to work? it doesn't seem to work for me and link is not an option for me because it sucks and crashes regularly for me

This is objectively the best way to immerse yourself in such games.
For example, right now on Oculus Quest 2 there is only a wireless connection via Virtual Desktop, I can play SteamVR games only in this way, and Euro Truck Simulator 2 bought only to play VR, but I can't do it.
After all, the game is still constantly updated, add full-fledged VR support!
This is important.
