Help using Xbox one controller
I find accelerating and braking in this game to be really frustrating when using the trigger buttons on a Xbox controller. It makes steering difficult because you're always accelerating to top speed and then having to use the brakes to slow down too quickly causing your truck to jerk a lot. Are there any better ways to drive when using a Xbox one controller or am I just stuck with the way it is?

I use a xbox one controller and I have no troubles with the analog triggers! They act as expected, if I press it halfway, for exemple, the accelerator will go halfway as it supposed to be. You can set the amount of pressure needed for them in the settings of the game and make them to your liking. Analog triggers and sticks are not meant to be pulled all the way down like an on/off switch and that a thing a lot of people seem to have a problem with. Use them gently and gradually, that should do the trick ;)

I use the right stick to trottle up and brake left stick to steer L+R and the up or down for the cruise control by 5kmh a click. the flippers i use as gear up gear down. LB+RB for blinkers Dpad up to enter a shop Dpad down for trailer attachment Dpad left+right to move my head select for map start for the menu Y to activate cruise control at the current speed and b to resume the cruise control. Works pretty well overall, rarely have to use a keyboard like this. Only when i need a different camera angle or reset and i still have free keys to bypass that if i wanted too

Agreed.
Be gently with them like on a real vehicle, you cannot just mash down on an accelerator or brake peddle in real life without causing issues.

You cannot use a button get a set speed because it is either on or off so you would be constantly pressing and releasing the button to maintain a speed unless you set the cruise control.

When you say adjust the pressure do you mean in the settings where you adjust the dead zone for the trigger buttons? I've tried doing that but it didn't seem to make a difference. I do push the trigger down halfway but that's basically when the accelerator reaches full speed. There is no difference for me when I press the trigger half way or all the way down. The truck just accelerates to max speed either way.

I do press gently. The problem is that if I press the trigger half way I get the same acceleration as if I press the trigger all the way down. There's no difference in acceleration for how much pressure I use when pressing the trigger button.

In options/playability, I put braking intensity at about a third of the slider ( on the left) and in options/controllers/acceleration axe, I put dead zone almost all to the left and acceleration axe mode to "centered". Hope it can help you But all in all, you have to be gentle anyway ( It seems worst in ETS2 than in ATS for me, the trucks seems to be more nervous than their american counterparts! Your menus may differ than what I wrote above because my game is in french as I am from Quebec ;)

By the way, if I want to keep drive at 50 km/h in cities for exemple, I have to keep my trigger at a quarter or less, It may be difficult at first but you will get used to it soon enough, trust me ;)
