The way train sim does it is you can "lock" the current camera position by right clicking then move the mouse cursor to which ever knob/switch you want to interact with and then finally right click to "unlock" the camera
It's possible to do it without having to lock the screen, in the context of ETS2 though? No idea, but I'd dare say it is possible - whether or not SCS would do it is another question.

Every single dial, buttons, knob, lever etc. works exactly how it works in the real aircraft - apparently. Whose to say the same couldn't be done for ETS2?
I never thought I'd see the day, but y'know how in the unofficial MP mod ye can cycle through the channels of the CB mod that they added? Ye don't have to lock the screen for that, all you need to do is get the cursor up and that's it. I'm pretty certain if SCS put their mind to it they could very well make it work for all the buttons, knobs etc. in each cab. They're all there anyway, all they need to do is do the other half.
a freind of mine has oen and i tryed it its lots of fun, and usin g teh Mic to talk in ets mp is very cool

To get a fully interactive one they are usually found in payware aircraft ranging from £30-£60.
With so much freeware available for ETS2 I dont think anyone would risk doing such a thing for ETS2 otherwise it would be out by now I think.
Also I dont think peeps would be happy at having to repurchase thier add-oms, albeit at a discounted price, when the SCS update the game.
