Yes, as long as you know how to drive well there are no problems. I've driven those conventional trucks in ETS2 while also using other mods that make roads and depots narrower and smaller and still had no issues whatsoever with any job.

The Peterbilt - Kenworth - Scania T model Wolvo VNL. All these trucks you can find as mods in the workshop for the game or n modsites. If you mean they should be added to ETS2 by SCS it will never happen, becouse you don't see them on the european roads, unless they are Showtrucks, And about the Scania T model it's so old that i doubt that SCS will get a license to add it to the game from Scania. Becouse they have thinking of to show there newest models to the game to sell trucks. And the VolvoVNL is made for the US market not the EUropean market, Volvo in the US and Volvo in in Sweden is to diffrent companies seperate from each other. So the License to the Volvo VNL in ETS2 i doubt that SCS will get, they have the Volvo in ATS " American Truck Simulator".
My advise is if you don't already play ATS then try that game, there you have long noised trucks,

These are the trucks there is in the game now, otherwise you need mods for other truck in ATS.
With that said, I think the other thing preventing conventional cabs from being seen is partially due to them trying to stick in line with length regulations in real life. I want to say for the most part, they're regulated to a certain length in most countries, and some of these hauling a regular trailer can well exceeds that. This is also why we don't see larger cabs like the Scania Longline, which would have a Sleeper close to what is seen in the US in the game too.
Of course, this could always change, especially once we start seeing rigid trucks I'm sure, or if they go further east, who knows, they might try to pursue permission to feature some of the trucks from out there.
