Trucks want to have a lot of torque as this is what moves weight. A 1000HP engine is too much Horsepower, but probably not enough torque.Tires are not designed for this power level.

Not always, The volvo trucks are more prone if slowing from really high speed. You can also pulse the brake button as if you were driving a vehicle without ABS. There are stability and brake control sliders that you can adjust in the menu for key control.
You can also use the E-brake or handbrake in the game to assist in an emergency - wouldn't brake like this on roads in real life, but fun to play around in game.
Also, I think it's a lot easier to drive on dirt roads.
