Right now I'm using a 40 year old DAF 3300......
Chassis: 4x2 is most commonly used in real life. More stability brings a Midlift or 6x2/4. For heavy hauls (and special transports) I recommend two driven axles (8x4, 6x4).
HP: Even a 370 HP engine will be enough for standard freight. Everything else is up to you. Just try. The Euro 6 DAF has some multi-torque engines available. Be sure to use the TX transmissions for them to get the little advantage such an engine brings.
Transmissions: I am not a friend of overdrives, so I rarely use them. A common 12 speed will do otherwise. 16 speed is nice for heavy haul but increases the fuel consumption. You'll get real automatic feeling by using the 6 speed Allison.
Just experiment a bit. You can't do anything wrong! Happy trucking!
