Technically you could, but TruckersMP requires you to have an owned copy of the game on Steam linked to your TruckersMP account. So if they didn't have that requirement, and the demo was updated to the current game version, then nothing would be stopping you.

So in reality, no. You can not play TruckersMP on the ETS2 Demo. You must own the game to play TruckersMP.

In Real-Life, you can't play TruckersMP on the Demo version of ETS2 or ATS. You have to buy or own the copy of the game(s) before you can play just that (which I can now do as I owned both games).
