There is a tandem mod that lets you configurate your truck like this, however the game was made for articulated trucks so you won't find jobs without a trailer.

Yes, there is a mod that lets you pick up 'invisible' trailers for such purposes however it's rather glitchy since this game is still made for articulated trucks.

Only a few in AI traffic. For the player only as mods.

Only for the trailer unfortunately, not for the truck.
