NaturaLux with Project Next Gen textures and Realistic Rain is the best possible combination for weather and visuals in ETS2. Add a good ReShade preset for even better results.

Or Project Next Gen textures and Project Next Gen weather if NaturaLux is too much of a performance hit.

Grimes has the best weather mods. I usually like to simulate driving through the four seasons, rolling dice for a random number of deliveries per season. In winter, I roll a percentage as to whether the weather is the mild winter weather or the snowy winter weather per trip.
