Way to change draw distance in the mirrors?

Yes there is.
Open your config.txt (the one in the base folder of the ets2 folder in the documents) and change the Numerical Value in that line
uset r_mirror_view_distance "800"

I use the seat adjustment to bring the seat back so I can see the left mirror.
Then I use the f2 key to get the right mirror whenever I need it.

I believe one of the Mirror settings in the Graphics option increases the distance.

yes , by default it is at medium, but you can increase tha to ultra. it gives a heck of a lot more advanced warning than medium does.
