However, my G29 replacement is about a week from delivery, so I can't know if the G29 software has the same feature built it. It was hidden on the G27 software. I had my paddles doing exactly as you described, except the Gear Up/Down. That was my retarder up/down.
On the other hand, the G29 has more buttons overall than the G27 does. A whole 4 buttons extra. It has that going for it. If you still haven't found out a way by the time my G29 is delivered, then I'll try to find it.
Had to change language in Logitech from my native to English (in the windows registry...) because of how things are translated. Anyway, under settings-->"Profile" tab there's a "Profile cycling" feature where you can assign a button to cycle through profiles. Then just set up a second (ETS2) profile and start assigning buttons! :)
Now I just have to do some thinking on which functions should belong to which profile. I'm thinking about dividing into two:
1. Stationary functions: trailer attach, beacon, diff lock, axle drop, start engine etc.
2. Moving functions: indicators, wipers, gear hints, CC, GPS and a lot more.
