The Essential Bundle any good?
Or what combination of vanilla + DLC (if any) would you recommend for an absolute beginner?

Considering everything ETS2 is hugely discounted (30 to 70% off) at the moment I would be getting it all less the paints, that is if you dontt want them.

I would get the essentials bundle to start. If you find you like the game and want more, you can buy the map booster bundle and cargo bundle that will add most of the other important DLCs at a slightly improved price. The only things you'll be missing then (from memory) are the specific truck customisation packs and the two trailer expansions along with paint jobs.

Also, this game has sales so often, if you miss out on grabbing something right now, you will not have to wait long for another if you can't afford to pay full price.

Though as was said above, just buying the base game is an option. Due to the way the extras are bundled, you can still get the essentials bundle later and it will just subtract the cost of the base game from the total. This is perhaps the best way to go if you are not sure about the level of enjoyment you will get from the game.

Thank you. I mean I will have to get me a steering wheel anyway so I might as well buy a bundle. Quick question though: I only see the essentials bundle?

Yeah, the other bundles aren't listed on the main page. If you view a map DLC, you'll see the map booster bundle. Same goes for the cargo but here's the links...
