Env_data.sii in def
Day_of_year is changeable there and will lead to actual day-nighttime circles if changed often and appropriately. There are mods which change it for you, either by exe/bat file or by workshop mod.

You have to extract it from def.scs and you need to build your own mod. Tutorials online.

Well, the day of the year is allways the same day in vanilla game - its solstice. However, still speaking of vanilla game, you can see how many days weeks and so on you have played the game on that specific profile. But, all these days are still the same date, solstice :)
What people are doing in mods are a different story that I dont know of.
