that's what I found.
A) set monitor 2 (your non streaming monitor) to the primary screen.
that sets the black screen to be displayed there when you launch. (just right click the desktop and choose 'displays' or use control panel)
B) then mirror the right eye display in steam VR and put that on monitor 1 (the streaming monitor) and set it to full screen.
(use the pull down menu to select Mirror Display and set it to right eye only)
then go back and click the icon for ETS2 so it will accept input again and off you go.
(if the menus still appear on the monitor, you have to press F11 to set it to the display)
this means you only get a half sized screen to stream with but at least it's better than a black screen..
A few games do not display full screen on the main monitor when playing in VR so you have to stream a display mirror for other people to see what you're doing.
hopefully the makers (and other VR devs) will set the game to display full screen when you're in VR so you can a) stream it and b) let others watch what you're doing
I can play for hours on this on VR, even considering the lower resolution. It's amazing the first time you lean out and look back to see where you're reversing. Massively disorientating if you switch to 3rd person behind the truck view and track around!
the way you describe would be much easier if you were streaming from the pc you're playing on so that should be tried first!
