I agree, Scania Streamline tops out at 105mph with the 730hp engine and the GRSO 925 gearbox.
You talking about in MP? Probably to get the extra 24kph they are either kitting it out with the 750hp Volvo engine, or a gearbox from another manufacturer which has a taller final gear(don't forget to take into account the differential as well), quite possibly both.
Although it doesn't red line in top gear at 105mph, it is at ~2200rpm, 300rpm above peak power, so a taller gear would still help.
Some mods do allow cross manufacturer parts fitting, and the validity of truck parts is only checked on fitting, so the mod being deactivated by MP won't undo this. Indeed, modding a truck this way is explicitly allowed by the MP rules/regs.
Of course they could just outright be cheating with a "speed hack".
Any proper "tuning advice" for ETS2 has top speed way down the list anyway.

Because i think that "tunning for make car fasta" is a core element of the NFS series and not truck sims... to each their own, but there are others who can and will provide the info he needs ;)

I didn't, but You have to find a loooong good stretch of motorway without sharp bends. Then you just put the pedal to the metal. I think there are some good long stretches in Poland. I was clinging to my steering wheel while taking this shot.
