That's what I'm curious about now as well. How are these escort cars going to know what you're going to do next? I like to take breaks after a couple hundred miles, sometimes they're maybe 5 or 10 minute breaks or I'll take 30 minutes (dependent on distance) before driving again. I might even drive straight from sender to recipient without stopping.
Unless they introduce some way of, I don't know, 'communicating' with the escort to let them know you're going to pull into fuel station to refuel or if you're going to stop at a truckstop then press a key or however it would work (if it even does work like this) to let them know you're ready to leave which would have them return to their positions.
I suppose they could code it in a way where only open road routes are taken and toll roads are avoided in order to avoid the issue of toll roads or at least parts of a motorway are used then taking the exits before tolls come up, unless they somehow figured out a way to make it work with tolls.
I also noticed the DLC that I thought it could be included with is actually called Heavy Haul DLC there isn't actually a DLC (yet?) that's called 'Oversized cargo DLC' so it looks like this would be a separate DLC altogether.
In some American tolls in my area they have side access along the far edge for large highway service vehicles. Perhaps they can go back and add in these side bars as a quick fix for the issue, perhaps with some mechanic to prevent using these under normal circumstances
