You can, there is nothing to stop you doing this any time you like. Do whatever practice you want without worrying about deadlines and after you have finished just load the previous save game. No progress lost and it just returns you to where you were before the practice.
I always choose the hardest setting when I have to park in ETS2 and ATS.
In ATS ... these damn long-nosed trucks makes it trickier but I'm a stubborn one, so no worries.

The Eaton Fuller shift knobs are available as a USB device which can replace the knob on Thrustmaster, Logitech and Fanatec shifters. This thing is a real knob in which the insides have been modified to use USB switches instead of air.

The $100 US price point is a little high for me at the moment, but it's on my wishlist.

It was created by Brett Aquila, a veteran truck driver, to help people get into this profession, get a hang of what is what, e.t.c. He also wrote a book "Becoming A Truck Driver: The Raw Truth About Truck Driving", which is free to read online on his site, or can be purchased otherwise. http://www.truckingtruth.com/book/
Of course he was a truck driver in USA and things are different in Europe (particularly, online training for CDL exams, which is also available on his site, would be somewhat useless to a person who is going to drive a truck in Europe). But there is a lot of experience to learn from the book, he describes how transportation companies work, what problems people can encounter in various situations and so on. It was very interesting to read!
Scania Truck Driving Simulator might be an excellent choice if you want to practise.
It's a great thing really. The only downside is the waiting time. It's quite possible that you will get your trucking license before your order arrives. The reason for this is that only 1 small company makes these (like 2 guys in a garage), they get a lot of orders and serve them in the same order as they receive. I created an order (#3275) on the 25-th of October, and it was shipped in the beginning of March, now I am waiting for it to arrive. If you want an SKRS, I recommend not to wait like I did, and order it soon (I could have ordered it several months earlier, but didn't do it). Also note that you can get an Easy Jake with it for extra $40.

I'm no natural at driving in general, but you bet I got damn stubborn mind to do things and make my dreams come true! I got an ADR training certificate too! Being the only girl in class, but I was the best, gets some respect from the men.
As a girl you really have to prove yourself amongst all the men. Not 100 %, but 110 % at least. But I did a perfect one-shot reversing manuever:

I got some respect from the men and thanks to my stubborness, I have spend a whopping 6700 € on driver's licences, truck driver's education and an ADR education. But I'm not finished yet, hehe.

Anyway, congratulations. I hope your road rage is only happening in the game.
I've been on and off regarding the truck licence, because there's the "normal" driving school with a couple of driving hours each week. But the school shared the truck and it only had the truck a few weeks at a time. It went on for too long. My driving and I concluded a truck driver's education was better for me. It turned out to be better, albeit I got extra driving hours and two failed driving exams. :steamsad.
I started with my truck licence in a Scania truck and passed the driving exam in a Scania truck. Took me about some 1½ years ... normally it doesn't take that long at all. But you learn from your mistakes and no matter what, be persisten and stubborn, you will eventually get your dreams come true.
P.s I only use the road rage in game.
