Plus in the full release there will most likely be a training area and arena place that will allow you to truly test and learn about your weapons with a actual tutorial.

3. Tutorials is a common complaint and has been for a a long ass time, capcom probably should work on that.
4. yeah some weapons are definitely better then others, but if you're good at the game the difference becomes negligible in casual play, so just choose what you enjoy.
5 There is a training area that has some combos for you to do.
+1 to you using the training area, it'll display combos for you to try out. There is also a weapon control list in the menu.
Some weapons for sweaty runs are objectively better, however with your example of SnS and Gunlance, it's coming from a beginner perspective.
For example, sword and shield has several benefits like easier healing, pretty decent mounting and a pretty tight up close style. Each weapon really has its own considerable list of strengths once you get your head around them. The game will become easier and this will further apply to subsequent titles.
As others said each weapon fits a unique playstyle and has pros n cons.
As for changing controls being "clunky" not really, mode/button dependent moves are necesary for any move depth
First are different ways to call it, pressing up (on the d pad) calls it in auto path mode, pressing down calls it in manual mode. You can play with these a bit get your preffered method.
You can also just straight up disabled auto pathing mode, the fun part of auto pathing is you can sharpen and do other things while it moves, rhe down side is you don't always wanna auto path.
Give it some time. You're seeing the pros and cons of each weapon without realizing it.
Give it a fair chance, play with a pal or someone who knows the game a lil and I'm SURE youll find somthing that sticks with you, (Hunting horn / Switch Axe supremacy tho)
