When they say it can do everything, they mean it- it can use almost every mechanic in the game. Mounting? Stunning? Cutting tails? Perfect Guard and Power Clash? Charge attacks? Evasive manuevers? Using items with your weapon out? It's got everything except Offset Attacks. It even has combo string enders.
In wilds in particular, you can sort of just smash triangle over and over and slide around until you're hitting the spot you want, but the real special thing about it is that you can focus attack wounds that aren't open yet (when you see the white marking) and do this ripping attack that forces them open and does extra damage. They don't have the /strongest/ wound popping attack, so if you're in multiplayer you can let other weapons take the lead.
Status weapons are pretty good in this game! 'Cause you can use one until you get the procs you want and then switch to an element or raw weapon and just do damage instead!
Infact, most of the weapons are pretty good in wilds except for the bowguns which took a heavy performance nerf in terms of versitality in exchange for cost of ammo. (They can get up there, but it's more about the gauge than the ammo types now).
Sword and shield is good, overall. Simply because while it's not the highest damage tier, it's also very good at keeping you alive. Between being able to slide under the monster and attacking it from the far side, to being able to shield (guard up is your friend here tho). The damage output is stable, and if you use Lala barina it has a good support in stuns.
Me tho? I'm going to keep poking the monsters face and doing power clashes with my spear.
If you want maximum damage output usually longsword or greatsword is a good go to as they have high maximum damage ceilings, attack speed you'll want dual blades, no weapon covers every base.
Don't let the new player friendly weapon tagline dissuade you though, because its well-roundedness means that, aside from reach, it has no real weaknesses and its versatility is its greatest strength. For example, shield bashes lets you get KOs and knockdowns, you can move during some attacks to maintain aggression while sidestepping to evade, a couple of its moves hit hard for those openings where available, it has easy access to mounting, rapid attacks means that it does good with applying status or dealing elemental, quick access to any item you need when you need it like traps, seeds, and pods, and with Wilds adding in Perfect Guard, its shield is more than adequate for deflecting a number of attacks and hitting back with a hard counter. The SnS is a weapon with many tools available to it and knowing which tool to emphasize and when is how the skill ceiling for it sits higher than you'd expect on an otherwise straightforward and no-frills weapon.
Lastly, if you want to be a support then don't worry too much because SnS has you covered there as well, so long as you put on Wide-Range and Speed eating skills. Being the fastest to use their items means that you can also be the quickest to react when a teammate eats one to the face and maxing out speed-eating means that you can have them back in shape by the time they get up off the ground. I've saved more than a few Safi runs with SnS thanks to how good Free Meal was in World/Iceborne. Wide-range and speed eating also allows you to throw on more buffs than most people's typical Demon and Armor Drugs. You can down might and adamant seeds, Immunizers, and even dash juices as well for your bow and Dual Blade friends for each zone you fight the monster in. Add in a couple pitfall and shock traps plus the materials to make them in the field and you can easily pull more than your own weight in quests with all the added stun time you can force on your target. There's a reason SnS has a reputation as a strong support weapon! Just make sure you're still slashing the enemy while you're doing all this.
PS. Don't worry too much about playing more of a support role even while solo. If you want to do support stuff, but don't want to play with other players, Alma has a settings option in the quest menu that lets you change your SOS flares to "Support hunters Only" which just means that using the flare only delivers the NPC hunters and not real players instead so you can spread those buffs around your Astrum Unit buds!

I think its easy to dismiss the ol sword n board as a beginner weapon in a lineup of morphing axes, musical hammers and explosive lances, but I think its a fantastic weapon.
But it ain't that good at anything at all, just "okay" on all front.
It's lack the "WOWzer" move with BIG damage like GS or CB.
It's lack the cool factor of a more flashy weapon like DB or LS.
It's blocking power is also not as good as lance family.
But it does an "okay" damage with an "okay" defense with an "okay" mobility.
All at the same time.
But it's just so "boring" overall. (atleast for me)
Nothing about it stand out aside from being able to use without having to sheath first to support your team, but even then you might as well play HH instead.
But try it out yourself, see if you like it or not.
Maybe it might click with you...or maybe not.
