Also, in the real world, there is land sailing, just because you don't like the comparison doesn't mean it doesn't exist. On top of that, if you know anything of the background story of Monster Hunter, you'll know how the humans are genetic super soldiers from a long lost advanced race. Further making your issue more ridiculous out of the things in this game.
On top of that, if you play the right frequency (in real life) sand becomes basically like water and solid objects will sink to the bottom. You could say that they are using some similar technology, or using material from one of the sand monsters that can burrow and travel super fast in this game (considering that the whole game is you defeating monsters and using their parts to make new and better gear, this even fits the narrative).
Do you complain about every sci-fi and fantasy game/world because it's "not realistic"?
Did you get your panties in a twist when in Avatar there were floating islands, hair sex, and transferring your conscious into a living drone? Or completely transferring your conscious to another body using tree roots?
In star wars did you get pissy about the magical and mysterious "Force", or light sabers? (funny Because Science video on youtube about what would really happen if you had one of those and turned it on.)
How about in Inception where they literally go to sleep and run around in your brain?
Or DBZ where people, and aliens, are flying around and shooting energy out of their hands, moving at the speed of light, and breathing in space?
Or any Call of Duty game where you can put a whole clip of bullets into someone and not kill them?
Maybe GTA where, again, you can take multiple bullets to the chest, or fall from inhuman heights and be just fine?
Oooh, I bet the Witcher series really upset you, forcing genetic mutations on someone just from some herbs and plants, and then all of a sudden they can do magic!, oh and Wizards, dragons, and a ton of other creatures that are unrealistic.

Monster Hunter has always been pretty internally consistent.
Real Answer is the strong winds and lighter/stronger materials than our world. usually wind is a key part in Mohran fights. The ships are usually sand skiff in design too.
