In the full game?
The devs plan to make it so you can enable and disable specific companion hunters, but iirc this feature may not be present at launch
Those AI hunters also behave differently when it comes to things like when they pop wounds
I always saw the same 3 ai hunters in the beta, a hammer user, a lance user, and a heavy bowgun user. I assume that when we progress the game, more hunters will join us with more varying weapons.
One more question, can we customize his/her armor and weapon? or he/she wear default armor and default weapon?
Pretty sure the ai hunter are named characters we can find in camp, at least the hammer user is, Olivia.

I'm hoping you can maybe choose what specific ones join you in the full game. As some of them are more useful than others.
Same for how they behave during a hunt , you probably wont be able to adjust their behaviour but different NPC hunters will behave slightly differently
