How to avoid being one shotted? (noob here)
I notice a red danger type icon right before it happens. But it happens like half a second after that appears. I've tried rolling away and running away but I always get hit.
Whats the timing? I use large sword.

I'm not saying this works, but have you tried blocking with the sword instead of dodging? Maybe you can survive the hit?

With the bow the dodge distance is long enough to get out of the way.

Alternatively you could turn in the opposite direction from the incoming attack, run away from it and jump, to do a "superman dive" to the floor. It generally avoids damage from almost anything.

That isn't a one shot if the monster has already chipped you down to danger low health, lol. Just don't get it. There is a skill that's called Quick Sheathe. It helps with putting your weapon away faster so you can heal. What might help you even more is to look for Speed Eating (Gobbler decorations) which drastically speeds up the use of potions and all consumables. You can also get those QoL skills from Talismans, look into what you can craft. Don't spam fat rolls away from the monster. Actually watch it calmly and only roll if you are about to get hit.

Also, eating a food item (not the rations) seems to give a huge health bar increase in this, not just stamina.
Just call your mount when you get into that situation.

Pretty sure "Large sword" isn't "Long Sword"
Get higher level armor and avoid combinations which put you below -4 resist on any element (use jewels/decorations to neutralize the low resists) :lunar2019piginablanket:

Armor upgrade is prohibitively costly, ignore this option till you get rank-8 set :lunar2019madpig: and even hen you ca safely ignore it.

If you are really getting oneshot its time for better armor. And early game you don´t have to be stingy with armor spheres for upgrading existing armor sets a couple levels for some extra defense. Costs like 15 basic spheres to get the early armor sets to level 4. And those wont help much on lategame armor. In that regard I entirely disagree with Astran.

Aside from that keep an eye on your health and fall back a bit to heal every now and then. Seikret can help with that but can be risky if you rely on it too much because it moves quite different to the hunter.
Beyond that its really just getting used to monster patterns and finding openings where you can safely swing your greatsword.

Some general tips for that, you don´t need to fully charge every attack every time. Sometimes a normal swing or a Side swing (B or Square) is enough to get some quick damage in without animation locking you for a while. And try getting more comfortable with the offset attack (Y+B) as that fully counters a lot of monster attacks if you hit them right when they are attacking. Can be followed up with Y for a high damage hit.

If you are charging an attack and are noticing the monster is doing an attack that will hit you, try pressing B for the tackle. If you time it right that negates a large amount of damage as well or get you out of the charge animation so you can dodge.

Blocking can also be really helpful, especially if you get the timings for perfect blocks down.
Be aware though that the greatsword looses sharpness when you block with it.

There are plenty of options:

- Most of the strong attacks are elemental attacks, so get an armor set that counters it. That alone already makes such a huge difference that it also lowers your overall potion consumption, but it can also make you survive even the strongest attacks of any monster (at least i've yet not seen a single attack that one shots me with proper resistance). as far as i can tell, 10-15 should help you survive pretty much any attack (i've barely seen anything taking more than half the HP bar)

- make sure to always have a food buff. You can hold L1 (or whatever it's on your input device) to see how much buffs last in the top right corner. Using vegetables gives you a defense and elemental defense buff, which combined with the armor should pretty much turn you into a tank.

- Also the attack animation is longer the harder the attack is. You've usually a few seconds to react to it. If you're only reacting to the last stage of the animation (like where the attack area gets highlighted, then you're most likely already too late. You can zoom your camera out to see the monster better

- It's also no shame in sitting on the seikret for a while and just watching the monsters attacks. Your cat will sometimes tell you that the monster is really angry (at least when you've the setting where it speaks). In that phase the monster attacks way faster and might do its signature move, so you can try to learn back a bit and trying to memorize the attacks.

- Also if you're very close to the monster you could try to dodge towards it. More often than not it's safer underneath the monster than right before it.

- And you can also use i-frames. A short time after being knocked down or being picked up by a seikret you'll be invincible, so you can make it a habbit to call the seikret when you're knocked down and sometimes you'll dodge strong attacks that way.
