The fisher give syou the bait needed for these fish.
The npc tells you the fish spawn more during Dawn, and During Dusk, and it's best to have the condition set to "plenty". You can either use your grill, Base tent, or Pop-up tents, to rest for 300 guild points, this will allow you to switch the conditions, and time of day. Of course in order to "Rest" you need to have made it far enough in the story in order to do so.
Use Emerald Bait.
If you're using a controller, rotate the left analog stick (or move it up and down either works), slowly. The Gravid Bowfin tend to chase slow moving lures. Other fish will bite, but eventually you'll get the Gravid Bowfin. They're the more "orange-ish" looking fish. while Vivid Bowfin are green.
No clues what the controller controls are.
Time doesn't matter, plenty is the preferred condition.
