What is Gemma saying?
I noticed when spending a lot of time in the forge menu's she says something like subarb and halo. Am I hearing that right?

One thing I noticed if I'm in the forge menu is that she'll periodically wave and smile, then immediately return to a neutral expression, making it look super sarcastic... like she wants me to finish up and p!ss off already.

She's greeting nearby NPCs as they come by, but she only does it when you are in the menu, and the non hellos is just her saying hello, but she is speaking in the native Wyverian tongue which is why it's a different word.

MH has it's own fictional in-universe language. Kind of like Klingon or Elvish.

It's sometimes referred to as Wyverian. There are even different dialects. Parts of it are bit of a mashup between Japanese and English, occasionally French, with some creative deviations. Previous games had an option to have the entire voice-over be in this language.

Wilds removed this option, but still has background chatter between NPCs use this language.

If I had to guess, "halo" might mean "hello", and "subarb" might mean "great/wonderful" (variation of Japanese "subarashii").

I think even Nata greets passerby after the story is done. At the very least can hear this talk going on outside the tent at base camps.

This is about the Japanese audio version, she sometimes uses the MH4 dialect.
Haven't paid much attention to what she says but when she's crafting sounds like she's humming the theme from Game of Thrones.

It sounds like Gemma and several npcs are saying "Hallo" and "chez varre"

Fairly certain she says ‘Yian Kut-Tuah’ before she spits on the blade she’s working on. Take that as you will.
