There is no yellow extract. Just red, white, orange and green.
red = head
white = limbs
orange = body
green = tail
If you attack the monster normally, you should get it automatically by hitting the right part.
It has been changed to be that easy.
Generally speaking the monsters Damage-Dealing parts give Red Extract (typically head and blades / claws), the Mobility parts (typically legs and sometimes wings) give White Extract... and Amber Extract comes from defensive / bulky parts... like the main torso.
They're not always consistent between different monsters, but if you remember Red = Damage, White = Mobility, Amber = Defence ... it becomes easier to figure out.
Green is just a leftover one some monsters have that is often the tail but not always...
TLDR: The key idea that I needed was that charging the kinsect makes it have "pierce" ability. So, that should help.
And indeed, it's orange, not yellow but on my dinosaur era monitor, the colours aren't so true anymore. So, it looks yellow on my screen but I do remember from the 3DS days (4U) that it's orange.
I do know which colours are obtained from which body parts. The difficulty I had was being able to hit the body without the wings, tail, limbs or head getting in the way, for the "smaller" monsters.
BTW, if I could hijack my own post-thread for another question, is there a way to make the kinsect gather a second extract when it's holding one already? For instance, if it has the red extract from the head and I want to get the white extract from the body and make it carry both back to me, is it possible?
in this state, it should go to where your reticle is on the monster, it will allow you to collect all 3 extracts without overwriting the needed ones.
111 can turn into 123
111 would not turn into 223/233
however, the healing extract can be overwritten as it isn't in the priority
