However, after breaking the head twice it swaps the "Enraged" mode for "Soulseer mode" in which it gets the attack boost (and also replaces the water laser with exploding bubbles and fire breath).
If you avoid breaking the head, the fight remains a lot easier.
It's half as slow as Soulseer flip was in GU, you don't have an excuse.

uh, my defense is at 680 and I dont use rocksteady, either. so.. 700 is probably possible.
I imagine this probably happened when it was enraged and you were probably wearing armor with a low resistance to water damage.
If so watch your health bar, it will actually flash red when the next attack the monster is about to do will cause you to cart and so you should do everything in your power to avoid the attack.
Or well, not really oneshot, but take like 80% of your HP, which can often feel like oneshot.
That's the only attack that does damage close to oneshot, can happen - gotta get the fudge out when it jumps up into the air.

But what's your water defense stat like? that's more important than the base defense number.
Mizu roars before attacks, its how you know when its coming and when to prep for an offset or just dodge. No roar for the double bite though, mizu bites onces that does a bit and does a double bite followup that hurts a lot.
Unlock Soulseer Mizutsune.
Go through all of Soulseer Mizutsune's quests one by one until you beat EX Soulseer...
Maybe boot up Rise / Sunbreak too and practice against "Apex Mizutsune" (Soulseer Lite) and "Violet Mizutsune" (Soulseer Alternate)...
THEN come back to Wilds and see how you do against the Wilds Soulseer.
It won't be so hard any more.
Tamamitsune is actually extremely easy this iteration.
Then you have not done a tempered mitsune then yet clearly, i watched 3 fully geared peeps get knocked out all at the same time with 1 flip slam.
