There is no other way but to restart.
Steam does not delete savegames when uninstalling. Ever.
There is a very good publicly available script which makes automatically a backup copy of your game when you start the game. You can and should use that in the future if you do not want to manually backup.
I just have a suspicion, but I am lacking information about your PC.
I tested it myself: uninstalled the game and see what happens with the savegame. For me it remained where it is untouched.

I have main Steam client install at C:/Steam/ while my main of all of my game install in D:/Steam/
Doesn't matter I wreck upon D: game drive nor uninstall the game, the save data is remain intact on C: which is inside userdata. Uninstall the game won't affect your userdata in Steam client folder.
MHWild by default setting doesn't keep your savegame data inside where your Game installation folder is. It is located where you Install your Steam client folder.

Check App permission or Mod(if you use any)

For reference, my account have enough permission, doesn't need to run as admin on Steam client nor the game itself. It doesn't need permission to read/write on specific folder.
I do run the game completely vanilla and no mod.
