Capturing is for the lazy
Different drop-chances depending on the monster and parts, also when you capture you get more guild points.
Capture = a few more rewards
It has slighly changed in Wilds, so there isn't really much difference, unless you want the chance for more Artian shard things or decorations from rewards. Capturing is also quicker as the monster still has 20% (I think) health left, so if you're farming parts capturing is generally better.
If capturing rolls on the "target" table, some items can not be obtained from capturing like the "Gravios Skull".
Edit: And if you have the food buff from Oilwell Basin you have more carves and if you have the food buff from sild you get more items from capturing.
Benefit of capturing: The hunt takes like 30 seconds less
Negative of killing: It takes a bit longer
Negative of capturing: I can't spam fireworks as long lame zzzzzz
Carving gives a slightly better chance for the rarest rewards.
You can check the drop rate on parts via the in-game monster guide and see for yourself. What you get from capturing monsters are "target rewards".
If you need all kinds of mats from a monster then capturing is probably better because faster hunts mean more mats. If you only need specific rare drops like gems, then carving is probably better.
Not ending a hunt early by capturing also gives you more time to break or sever parts too.
One really isn't better than the other. They both have situations where they're useful.
If we're talking about speed, capture is faster because you're essentially ignoring 20% of the monster's total HP. So capture is recommended if you want a faster time and skip the carving process entirely (the game automatically carves 3 times for you).
Reality is this, you will hunt loads of monsters and the time spent on the forum discussing this is time not spent getting to 50-100 hunts on each monster.
Carving and Capturing dont really matter in the long run because you will have to do so many hunts anyway an niether will shave off significant amounts of time, you will still hunt down more than dozens again, we are talking 50-100 hunt range for each one anyway.

also lots of misinformation in this thread. capturing and killing give the EXACT. SAME. REWARDS. there is no difference. killing = you get the target rewards, then you get to carve 3 times. capturing = you get the target rewards, and it gives you 3 instant carve rewards.
