The optimal space to avoid its breath attacks is to the left or right of its head about 4 metres or so. Too much to the side or center and you will get it. They can also loop back around, so too far away can sneak a hit in as well. Skills like evade window are very comfy for this fight, but make sure your armour is maxed out as much as possible with armour spheres.
Use your radial menu for fast access to healing items. Optimal Healing and Optimal Status Recovery will use your items that best manages what your dealing with. Topping up is super important as well, you can soak a hit or two at full but one bad hit at half is a cart. With this in mind, 10 potions, 10 mega potions, 2 max potions, 1 ancient potion for a max of 23 heals is huge.
Dont forget, optimal dps is without defence but you cant dps if you are dead. Dont be afraid to pop in some defence or divine protection gems. And if you can, theres a meal ingredient that gives you extra defence when in the cold zone (And volcano, but less impotent).
Just take your time, watch how it moves and fights to time your attacks. Nulberries for Frenzy, but it doesn't seem as dangerous when it was first introduced, really watered down if anything.

If you master the DB dodge, Gore Magala is actually pretty harmless for DB users and Bow users.
P.S.: Remember - you can call NPCs for help - set Quest settings to support hunters, and when you set off an SOS the NPC hunters come for help.
