You can compare it with the list

Some items which are exclusive to the premium edition are missing.
In doubt: contact support@capcom.com for clarification
Steam Support might be able to help too, depending on the circumstances.
Why then the DLC PASS costs 50 EUR if it contains only Deluxe goodies, buyable separately?
Difference between Standard and Deluxe is only 20 EUR in my country. If it really does not contain anything extra, it is pretty scam move :)
It is supposed to contain more, upcoming content, which is not listed there properly.
I recommend to disregard the idea of upgrading, unless Steam support or Capcom support gives the recommendation to do so.
In the past I do not recall special items to become available later on. So in regards of fear of missing out you win more by accepting you missed the chance of preordering Deluxe Edition. And there is no harm to it aside of the actual fear of missing out.
You gain more by buying cosmetics only which you want, later on mayhaps on a discount.
You can also preview a lot in advance on the official Capcom page:

By experience: I am not using any of the items, despite I own everyhing

Mods also offer a wide range of eventually more interesting cosmetics you never knew of

they work even on Playstation if you know how.
The only other thing that you'll ever want to buy is a single DLC which will add master rank content, which no one knows when is going to come.
Calling that a DLC - I personally think - is misleading. But yeah, every Monster Hunter title so far is basically a base game plus addon.
The addon traditionally gets released around one and half year from now on.
Every other DLC with no fail is just cosmetics in one form or another and do not affect the gameplay or content in any way.
Weekly event quests are free of charge
https://info.monsterhunter.com/wilds/event-quest/en-us/schedule
And upcoming title updates which bring more content - putting aside the addon - are also always free of charge.
Personally I think the cosmetics etc. are only of interest for two kind of people.
a) completionists or rather cursed collectors
b) people who like to show off cool items in multiplayer
The latter I have already an immunity, considering you can mod the game so easily with really amazing outfits, weapon skins and so much more.
If you want the complete pack, because you like the game - just play the game to show you are a fan and have fun.
It does not matter what you own from the game to be a great fun. Just have fun as the game intends you to.
And mayhaps, or mayhaps not, in the future you get the chance to get this and that for cheap, discounted. If you still want it by then, you can get it.
Before that: be a winner not because you own the stuff. Be a winner because you are having the best fun you can with the game as it is.
Happy Hunting!
I was mainly interested in Wyverian ears, but paying for the base game twice is really not worth it. It would be a very overpriced ears
My hope is ears will be sold separately as a single DLC in the future
Yeah. I agree. Those, and the hunter profile set are the things exclusively to the premium pack. I dislike the ears, though unfortunately I cannot give them to you.
Maybe - I can imagine it - they become available as a future bonus of another pack.
I probably would plan to buy a premium bundle of the addon, when it gets released in 1,5 years - but who knows? Maybe until then you found a favourite armour. And the ears cannot be used when you are already using another headgear. So that too can be hard to wear...
Unfortunately, no. It is an optional headgear cosmetic. You either use that OR a headgear. You cannot combine it with other armour etc., making it ears only.
Here are some example screenshots of how it looks ingame
close-up, it is just a little interesting - I find other armour pieces more interesting, and I am going to get glasses for my character. In normal gameplay you can hardly notice the ears, especially with long hair
