in other words, she is what you were in every other monster hunter game.
The non FOMO gamers.
A big part of MH storytelling is that you're part of a wider team/village where everyone does their part. Olivia and her team are "aces" that are specially picked to fulfil higher objectives than the main mission. You may be the team lead but you also need to rely on your allies. Power of friendship and all that anime crap. MH is anime. If you don't like it, collect your refund and find another franchise. It has literally always been this way.
It is not supposed to revolve around your Hunter, and it never has. You are one of many in an organization dedicated to ecological preservation and defending people against the giant monsters that inhabit the world and go berserk when the ecosystem is disrupted. There are hunters that are better than you. There are hunters that are worse than you. The player hunter is always counted amount the A-listers, but you are not the protagonist of the game, you are just a dude who's good at their job.
Olivia is in a small fraction of the cutscenes and only does a few things action wise at which point you, the player, takes over and does 99% of the work, after which you are constantly told how great you are and how you surpass everybody's expectations.
Then why don't they just do everything?
But seriously, I think an entire section of the story was all about "you can't do it on your own" the mission is a team of people, including multiple hunters. The story is just that... a story, Olivia is shown and explained to be an ace and defacto leader of their group, if not the mission as a whole, so the story showcases that. And its not like we dont get our own moments to shine so eh.
Because you are also there and you are also an A-list hunter being paid to be there and do your job.
