Are you hunting with other players? If so, they may have chosen to capture the monster instead of killing it. There is no carving a captured monster. In multiplayer discuss whether or not you are capturing or killing before the hunt starts, or shortly after the hunt begins to avoid this fate. Either that or do solo hunts or hunts with friends who agree with you.
Another telltale sign of a capture is that the timer is much shorter after a capture than for a kill. You get 60 seconds for a kill, but only about 20 seconds for a capture. Was the timer short?
