Mate, you should delete the Shader-Cache (File in the gamefolder) + you can use the Windows-Disk Clean Up tool to deleate all garbage including "Shader Cache" on Windows (there're two of them!
After that - Testing!
If this didn't solved the problem:
Deinstall the game and do a fresh installation!

Maybe give that a try
To verify game files right click the game in steams library ---> properties ---> installed files ---> verify integrity of game files
And wait for steam to do its thing
First update > Game broke, Lod Broke, Texture Not loading anymore, They all look like hagrids, Game performance dropped, Never fixed for my pc spec. I hate it, same happening here.
Move into the game folder mostly located here:
C:\Program Files (x86)\Steam\SteamLibrary\steamapps\common\Monster Hunter Wilds\
There you will find the file:
shader.cache2 -> delete this one!
Then search windows for:
Disk Cleanup -> Start as Admin and in the list for the Drive "C:\Windows" you will find "Shader Cache" as well -> enable by Checkkbox!
Clean the system!
Back to Steam - Library -> Monster Hunter Wilds -> Properties -> Installed Files -> Check Content for errors.

You MUST do the updates again, because these files will be exchanged by the Steam-Check!
When you restart the game, after these steps, the textures should be back again!
Yesterday after update v1.000.03.00 I had the Missing-Textures Error too - TODAY "of CAUSE" I had the same issue AGAIN, because of the Update v1.000.04.00!
What a Joke ... why is Capcom creating so many problems?!^^
