They really couldn't add this without changing the monster for everyone.
because you can just make a simple hitbox for the small spiders and reskin their 2 attacks.
to do something similar with the large monsters there is no easy way to keep the same detailed hitbox and attacks while massively redesigning how the monster looks.
this would end up meaning you either have 2 large monsters that have very screwy hitboxes and are actively screwing yourself by picking that mode, or they have to entirely make a new fight for arachnophobia mode for those 2 monsters. which now creates a balance concern and a multiplayer concern. arachnaphobia mode if it effected them and changed the fight would mean you can't play with non mode players, and you will have players picking one mode over the other based on which is easier for them to fight. and if the non mode is easier, you would be punishing yourself to pick it.
tl:dr there is literally no winning unless they didn't add those monsters (which probably would of been the smart move) and this is the option that impacts the game, and thus the players the least.
Oh, I missed the memo where every single monster in the game is a spider now . . .
Play with someone not afraid of it, let them defeat the monster.
Wait for mods to reskin the monster.
