From begining till end LBG and HBG only
It depends on the type of player you are. HBG usually has a shield mod so you can tank hits because your mobility is horrible. That being said, the HBG absolutely decimates monsters if you can get it going uninterpreted.
The LBG is more like a dance with the monster. It has decent mobility, but usually can't match the HBG in raw damage output. However, if you get a LBG with some rapid fire ammo, you can do almost as much damage as a HBG with way more mobility. The draw back is needing to reload more which is why using a LBG is more akin to a dance.
Light bowguns tend to have shorter range and higher recoil, so expect to be up close, at least closer than you would normally want for a ranged weapon, but your mobility means you can strafe and dodge much better.
Heavy bowguns may have better range and recoil, but you're going to be practically stationary since you move like you're carrying a cannon. The shield mod for it means you can block where the light version cannot, and due to the new clash mechanics, you might actually want to go in that direction if you can get the timing down.
With both, the types of special ammunition are different based on the build of the bowgun, so each tier you ascend through, you may have access to different types or lose access to some.
In the smithing screen, you can check the ammo capabilities if you tab over, although it'll seem like a spreadsheet with unfamiliar icons if it's your first time seeing it.
