they aren't stupid enough to think not having a demo is better than the opposite, especially if they can (and they did in japan already didnt they?) put a more up-to-date one out that'll put peoples fears to rest
Both World and Rise had betas as well as demos, it's just that the betas were for the initial release and the PC didn't get the games at the same times as consoles. That's different for Wilds, which is why we got a beta this time as well. The odds of having a demo (likely with three hunts of ascending difficulty) are quite high, as that's been the format for multiple generations now.
The team very specifically used the term "open beta test" to refer to the beta we got. Generally speaking, they don't use that term for the format that MonHun demos get. Japanese is really big on categorization and context, and to them a beta is a completely different thing than what we call a demo. They are not equal.
The Director also mentioned during the recent "pre-launch community update" about a week ago that they might run the last playtest again, but it wasn't his call to make.

Capcom pretty commonly releases demos too, so I think there's a good chance there might be one for wilds.
You can hold on to hope that we're getting an actual demo, and I hope we do get one in the vein of past games, but the pedantry doesn't really refute the rest of what was said in the livestream. They explicitly said that if they did it, it would be the open beta playtest build and would have none of the improvements they showed off because they were working on them to be implemented by launch and with the day one patch.

The demos they've done for World, Iceborne, and Rise have been specific monster hunt quests, and the Playstation/Switch versions had betas as well.
