the stars just give an overall idea of the monsters biggest weakness, TL:DR they are more complicated than mere stars can represent. all you need to know is that more stars = better, and the bigger numbers above = better
BTW, any returning monsters will most likely have the same or similar weaknesses as they did in past games, so you can look at older sources for references if need be
kiranico uses datamined information so it should be accurate
Not everyone knows those charts, and some prefer to find it out ingame by comparing the numbers.
