Hitstop in the beta was caused by World players feedback
In a recent interview with Tokuda by GamesRadar he says the reason for hitstop not being in the recent beta was because of feedback from World players saying that the mechanic made the combat feel sluggish and unappealing to them in as exact words as I can say "some of the changes in the hitstop were obviously intentional, and some were not implemented due to the settings of the game. When Monster Hunter World was released, many of the users from overseas commented that the hitstop was way too hard and it made it difficult for them to play. So it's very positive feedback seeing the users who experienced the [Wilds open beta test] this time saying that they missed the hitstop that they were experiencing in past titles.; it has since been added in to the most recent build at the Osaka event after player feedback from the beta asking for it's return." It makes me wonder what else was changed by new players from World not liking long standing mechanics? It feels kind of absurd to have changed such a beloved mechanic that is unique to the Monster Hunter game feel based off of new player feedback.

Just make it optional.. There really is a way to please everyone here.

Hitstop dramatically effects game balance and combat feel. Toggling it would make it impossible to balance certain attacks and weapons. It must be in the game full stop as it has existed for a long time and monster attacks are now designed with it in mind.

Well it wasn't in the beta and that was fine....

And if it wasn't in the beta then the game was originally balanced without it in mind...

The beta felt fine to me without hit stop, but I'm fine if they add it back in. It just cannot be a toggle due to how that would affect multiplayer hunts and how it affects weapon dps.
I am once again saying I did not like hitstop, my first game was World, and I was happy I had no hitstop on my beloved insect glaive in Wilds.

Yup, the Wilds beta felt so smooth and flowing and I couldn't put a finger on it until the hitstop was pointed out.

Having now seen videos of it returned, i'm genuinely concerned.

We've finally had a Monster Hunter with fluid combat animations and we've just jumped back 20 years into the past.

Hitstop is important for immersion and feel. In almost every instance of praise one can give a game for feeling weighty or for attacks to feel impactful it is because of the game responding to your input; hitstop is a cornerstone of this aspect of design and tells the player what they are hitting is resisting their attacks; it creates incentive to see your attacks follow through and creates satisfaction for the player when they can more easily visualize their strike powering through resistance. Just because you personally do not like it does not mean it is not popular for the vast amount of players; this is why it exists in a lot of action games and especially action games that demand proceeded input, combos and tight execution. It not only offers satisfaction for player input but allows said player more time to adjust to their own actions and the reaction of their target. More players wanted it back than players that wanted it gone and now we have it back after an experiment with it removed. Suffice to say this is the nail in the coffin that hitstop is here to stay forever; there is no reason to repeat the experiment when it had this kind of reaction.

i would simply argue that if they could add it into the newest build of the game so quickly and/or easily, it would likely be possible to make it something you could toggle as an option in the game settings and stands to reason that with a game as popular as this will be, even if most people like and/or want hitstop, there are enough people who don't that it would be worth it to allow them to disable it if they want. when your audience is in the double digits of millions of players, you can afford to cater to 2 and sometimes even more different kinds of players that a smaller game with a smaller team and audience likely wouldn't be able to and wouldn't see a reason to.

this topic reminds me of the topic of wanting to toggle invasions in Elden Ring and the Souls games and the people who for some strange reason don't want that to be an option in the game for the people who would want it. what would it hurt by them letting people toggle this as an optional feature? i understand it's in the game-i just don't understand the seemingly antagonistic viewpoint of not even wanting it to be in the game for those who want it when you know it wouldn't impact you cause you wouldn't be using it anyway. what's that about? would you be upset if they added it as an option you could toggle?

The thing about it is you really can't make it a toggle, it would functionally break all balance in the game and would not work in multiplayer at all that way.
