Brotherhood of Steel kills me and I can't do anything aymore
The problem is the following. I did some quests for the brotherhood of steel together with veronica. Everytime I now go out of the hidden valley the pladains speak to me and will kill me and her because my speech isn't developed to 90. this means I have no chance in escaping there. I don't want to use the console, because that would mean, that I won't get any achievements anymore. What can I do there?

Returning to a save before your last visit to the BoS-Bunker?

AFAIK the BoS Paladin Attack only takes place at a certain point in Veronicas Companion quest, therefore you may delay it by putting your missions for the BoS on a halt and doing other quests first

Make sure you are not wearing any faction related armour. I was wearing ncr armour and they blew me away :P.

Using console only stops achievements for that session - that is, if you quit the game and restart, achievements are enabled again. This means that the only risk you would have of missing one is if you manage to hit one of the damage-related or stimpack-related ones while in the fight. If you need to cheat to survive, just do it, then save/quit/reload and you're back on Achievement Highway.

(Any chance your speech is at 80 and you can pass it with a magazine? There's probably some other sneaky non-cheat ways of fighting that fight, but they depend on your equipment... turbo? Stealthboys? Mininuke-mines?)
A Meeting People with base Speech of 70 will do it if you have Comprehension, or if it's below that, you can attempt to boost your CHA with Mentats, PT Mentats, or booze.

If you end up having to use the console...

player.modav Speech 90

Type that in, then afterwards, replace the 90 with what your Speech was before.

then
player.modav speech -<value>

note the negative operator to remove the additional values

You could also force the quest stage progression or just kill them

force.av has the additional effect of removing any non-console change to the stat, which I'm assuming is something the OP doesn't want. Aside from that, yeah, forgot about it being a change instead of a setting, considering I used it to change my character's Luck earlier, but still, watch the force.av...not something you want to use if you have a choice.

why not just jump to the quest giver?

The only things that can change an actor value after it's been force.av'd is another force.av or mod.av. Skill points, skill books, equipment, perks, nothing else can change the value.

well you can jsut run the hell away as fast as possible or you could umm... keep trying to kill them. Keep trying or run basically all you can do.
