Alright, to answer the question(s):
If you go the peaceful route in Cass' quest, the Van Graffs WILL be hostile, but the Crimson Caravan won't.
Is it worth keeping Cass? Eh, she's not the strongest companion (even with the perks from her quest), and if you want to trigger the quests for the other companions, it's probably worth sticking her in the Lucky 38. There's a bit of extra dialogue after completing her quest and if your karma level goes too low, but other than that, nothing.
For example Arcade Gannon chatted with me for a bit when I entered Repconn HQ for the first time, and Boone started talking about his wife after I killed the Legion Centurion prisoner in Camp McCarran
I already visited all the three looted caravans with Cass, so now have to decide to either let her be killed and do 1 more quest with the Van Graffs, or kill the Vangraffs, loot their entire plasma arsenal, but lose the merchant that way.
My only remaining question is that if I report them and Crimson Caravan to the NCR, will I no longer be able to trade with that guy in the Crimson Caravan HQ?
