No canon ending -yet-. Bethesda doesn't do canon endings, but interplay and black isle did do canon endings for fallout 1 and 2. Obsidian even made some canon in new Vegas, like Marcus and sleeping with the bishop daughter for example. Fallout 1 was confirmed a male vault dweller who did the good ending and saved Tandi, fallout 2 is confirmed a male chosen one who did good ending, recruited Marcus, and banged the bishop daughter.
Whether the Courier is cis, trans, masculine, feminine, nonbinary, or whatever... they're still gonna need to be hydrated.
And yeah while I've seen some really neat outfits at Pride marches in my area I've yet to see anything Fallout related lol
On 1 and 2 it's definitely a male, since it was confirmed by the developers, themselves.
On 3 it can be anything, really and on 4 it's a female. But that's just my opinion.
