How to interact with slot machines?

Press the activate key, same as everything else.

Note that not all slot machines can be interacted with. When they're organized in rows, usually only a single can be used.

the ones in prim can only be used after you finish all the related quests including the 'NCR deserters'

Indeed, after finding Primm a new sheriff, you will have to wait a few days for another event to occur, after which the casino will open up there.

Don't feel bad about not knowing how to gamble on Slots.
Although I don't do much of it myself, like non-whatsoever, I was wondering the same thing.
